Crispy Oriental Chicken Salad

Hey, guys!

I know I have not posted in awhile. I have been super busy with my new job!  Most of you know I have recently started a new career path in the brewery business at Peace Tree Brewing Company and have been busy learning the ropes! I have been trying to focus on my family and my new routine and haven’t had time to share my recipes with you all!

This recipe I am sharing can easily be made into a wrap or eaten as just a salad. You can use grilled or crispy chicken. This is great if you meal prep or if need to make ahead for the next day.


Oriental Dressing Recipe:
1/3 cup mayonnaise (I use off brand)
3 tablespoon honey
1.5 tablespoon rice vinegar
1 teaspoon Dijon mustard w/ white wine
1/8 teaspoon sesame oil
Pinch of sugar

Directions: Whisk all ingredients together and store in refrigerator till chilled. 

Salad fixings:
Crispy chicken or grilled chicken(In a pinch use crispy popcorn chicken!)
Frozen sweet peas
Dole Chopped Salad Kit (Sesame Asian salad with kale & green onions)
Romaine lettuce
Chopped Almonds
Crispy Chow Mein noodles

What I do: Cook the chicken & steam the peas and chill in the refrigerator until cool. I mix the Dole Chopped Sesame Asian salad with the romaine lettuce. I really like the kale and the white and purple cabbage in the kit, it gives the salad a nice crunch! Place the mixed salad, chicken, peas, chopped almonds and crispy chow mein noodles in a bowl and drizzle with the oriental dressing!

All and all the new job has been different than what I am used to and a much faster pace but I do not regret my decision!  I have learned so much so far and thankful to have this opportunity! It’s kind of bittersweet to leave ten years of the healthcare field & nursing behind but will continue to keep my RN license up for volunteering and things like that. I still have that inner nurse in me ask any of my new co-workers!  All of us nurses know that NCLEX exam was hard work and will not let that go!
