Just Another Appetizer..

What we want is some Buttermilk Brownies, but what we got for you is a quick little appetizer. Again. Maybe this blog should be called The Appetizer and Pint? Eh. That could use some polishing too.

Anyway, these were made over Christmas and intended to get posted months ago. Maybe not months, but weeks.

Almost eight months pregnant over here. My brain isn’t exactly, uh, let’s go with focused. Yeah. All focus and motivation have left the building! Body. Have left the body.

Recipe. Let’s get this over with before this gets even more out of hand.

Enjoy. With a  beer. For me. Please? Pretty, pretty please?

Anyway, while milk and cookies are typical Santa food, we set these gems out on Christmas Eve, and we just have to spread the good news. This recipe. Reuben Rolls. Simple to make in very little time. It’s the perfect appetizer if you’re too tired to cook. Throw this into your Super Bowl party roster. They’ll be a hit. You’ll be a hit. Your new year will be a hit. Thanks, Taste of Home.


Grocery List

  • 1 package (8 ounces) cream cheese, softened
  • 3 tablespoons spicy brown mustard
  • 1/4 teaspoon prepared horseradish
  • 5 flour tortillas (10 inches), room temperature
  • 7 packages (2 ounces each) thinly sliced deli corned beef
  • 15 thin slices Swiss cheese
  • 1 can (14 ounces) sauerkraut, rinsed and well drained


  1. In a small bowl, beat the cream cheese, mustard, and horseradish until blended. Spread a heaping tablespoonful of cream cheese mixture over each tortilla.

  1. Layer each tortilla with eight slices of corned beef, three slices of cheese, another heaping tablespoonful of cream cheese mixture and 1/2 cup sauerkraut. Roll up tightly. Chill for 1 hour. Cut each roll-up into 1/2-in. slices. Yield: about 8 dozen.



And an opinionated side note, let’s talk about our New Year’s goals. Please stop talking in emjois. There is no need to replace the English language with them. We like to be able to read our text messages rather than decipher them. Ain’t no one got time for that, and if we see another selfie stick, well, we don’t know, but let’s retire them.

Let’s make this “Sweet 16” year a good one and not about how many “likes” and Facebook “friends” we can acquire.
